org.eclipse.ui.examples.undo is a great example for undo / redo. I added a small README.md which describes its usage and did some minor code cleanup.

This now causes compile warnings in the official build:

Fixed with https://git.eclipse.org/c/platform/eclipse.platform.ui.git/commit/?id=0560e78f9679fae29d1bd5061a49ca58490e8881 which also contains some more cleanup
