Make GTK_VERSION a variable in the make file to allow easily trying to build against GTK3 while porting (aka GTK_VERSION=3.0 sh ./build.sh). This patch allows building against single GTK version only so it's not the long term solution for having GTK2 and GTK3 support simultaneously compiled but it will greatly help porting and will not change the default build at all.
