There was a discussion (http://community.jboss.org/thread/158037) about a project that had EPL+MPL+LGPL+ASF all in one umbrella project.  Red Hat JBoss Tools.

They have more than one license in their bundle. As it was not possible to put it more clearly, they had to use "Other Open Source". See http://marketplace.eclipse.org/content/jboss-tools-1

Would it be possible to be able enable selecting multiple licenses?  That way, that project could better describe the bundles licenses.

We should consider using SPDX here. The SPDX standard has an expression language that is well suited to specifying how to combine licenses.
