One of my posts submitted several months ago has been displayed after I changed the tags attached to this post.

This post was about one of my talk "yesterday" at EclipseCon ... and we are in June :-(

Would it be possible to automatically filter the posts based on the date ?
For example, posts older than one week would not been aggregated anymore.

Not possible. We rely on the "published" date information in the feed. Your blog software should not update it when you modify your post. For example, WordPress doesn't do that.
