The only way to set the 'due date' after creating the task is to do so directly in JIRA.  After saving in JIRA, the 'due date' field then shows up in the Eclipse view attributes section.

Note that a 'Due Date' field does show up in the 'Planning' section of the Eclipse view, but it is local and updates here are not synchronized with the repository.

I believe this shortcoming has been addressed in the latest weekly build: http://www.eclipse.org/mylyn/downloads/#weekly . Please reopen this bug if due dates still do not appear after updating.
