unlike the web UI, jira task editor don't give choice to set "unknown" fix and affects version

Is "Unknown" a special version or is that essentially the same as deselecting all versions?

I guess, I got used to the web ui. The value for "unknown" version, conponent and anything else is -1. Perhaps it is an usability issue.
