1) unfilter a package using ALT + click
2) try to fold another project without release alt

We can see that we can NOT fold this project

By "fold" I assume you mean press the "-" in the tree node in order to collapse it.  That's correct-manipulating the expansion state of the tree is not supported while Alt is clicked--only unfiltering parts of the tree is.  If you have a use case for this please describe it in detail and we can consider reopening.

Besides can't fold a project, We can't expand a project when ALT is pressed which is VERY not friendly.

Now, I want to find an element in a project. When I unfilter all the projects, I can't click "+" to expand a project. If I click the project node to expand it, and I can also expand the package in the project by clicking "+". If I click the package in the project to unfilter the classes the the package, all the other temporay unfiltered packages are disappered. It is very not friendly since we can't make sure the class we want to find in the package we clicked.

I guess supporting multi temporary unfiltered element can avoid this problem.
