Would it be possible to have control over the format of the data generated by the "Copy details" menu options of the task list.

Seems like a reasonable idea to me considering that we already have a templating mechanism for commit messages. It should be reasonably easy to reuse that. The bug has been marked helpwanted to indicate that we would be happy to support a community contribution to resolve it.
