For example operations :
in operation preference page 5 options can be set : 
Visibility, Name, Parameter Direction, Modifiers, Parameter Type

In property view 10 options are possible.

Another point : 
THe stereotype display options are not available in preference page

In Luna, the CSS Stylesheets are shipped by default, which makes the Appearance Preferences deprecated (Not used anymore).
