Currently we build Orion using a nightly build of JGit. We need to switch to using the release version so that we are not releasing a nightly build of JGit's code.

That would mean we are not going to consume new features developed in JGit as quick as we do now. We'll need to wait for a release build which is rolled out every 3 months or so. The next one, 1.2.0 is planned for Dec 15.

Yes. We can switch back to consuming nightly JGit builds after we ship 0.3 next week. This is just to ensure we are not including unreleased code from another project in our release (which is not allowed in an Eclipse release).
