I get the following error when trying to install the server adapter:

Cannot complete the install because one or more required items could not be found.
  Software being installed: Oracle GlassFish Server Tools 1.7.1.201102281103 (oracle.eclipse.tools.helios.glassfish.feature.group 1.7.1.201102281103)
  Missing requirement: Oracle GlassFish Server Tools 3.2.1.201102281103 (oracle.eclipse.tools.glassfish 3.2.1.201102281103) requires 'bundle org.apache.ant [1.7.1,1.8.0)' but it could not be found

yep, it is an OEPE bug, not a glassfish plugin bug. Talk to Konstantin, he knows...

I get this error in a WTP-M7 build. Adding Konstantin.

I haven't tested it yet, but my understanding is that the WTP catalog of adapter repositories has already been updated to point to OEPE's Indigo repository. See Bug 342770. This failure is the result of trying to install into Indigo from Helios repository. I will download M7 today and try.

I used WTP 3.3.0-20110428114127 build (latest build towards M7) and was able to install GlassFish and WLS server adapters. Note that the error that's reported here would be expected for WTP M6 build, before the registry was updated to point at the appropriate OEPE repository.
