If you right click on a Maven project, choose Maven > Remove Maven Nature, 
the Maven menu disappears and there's no way to add the Maven nature back

Did you try the configure submenu?

You're absolutely right Pascal, I overlooked that menu. I'm probably too used to see that option in the Maven menu. A m2e noob might find it more natural I guess.
Be sure to add it to your next N&N.
