Use case (using new workspace):
1. Open Preferences, Environment tab. Enter a variable. It shows in the list.
2. Press OK to save and quit eclipse.
3. Restart eclipse and go to back to the preferences. The variable shows in the list.
4. Press "Restore Defaults". It will remove the variables trying to fool you.
5. Press OK and quit eclipse.
6. Re-enter eclipse and check on the Environment tab. Ouch. The variable is still there.

Append or Replace flag does not seem to make a difference.
