Currently the due date is kinda hidden away. How about reusing the Scheduled action in the header to also being able to set the due date? 
Maybe some sort of "time management' action where Mylyn would put int he scheduled stuff, and connectors can contribute things like due date, estimate, etc.

I agree that there is room for improvement. I am not sure that overloading the scheduled drop-down is going to help much though since that is already somewhat difficult to find. Let's consider this as part of bug 158921.
