The Jersey JAX-RS implemenation uses Jettison to marshal objects as JSON.  There are a couple changes that need to be made in MOXy's XMLStreamWriterRecord to make this work:

1.  Only set the encoding when it is different than the default (utf-8).
2.  If there is no NamespaceContext, then write without any namespace information.
