Referring to latest nightlies of both EGit (0.8.0.201005300830) and JGit (0.8.0.201005300828). 

For some days already, the "Add Files to Repository" (just labeled "Add" in the context menu) doesn't seem to be doing anything anymore. No messages popping up, no errors logged in .log file of the workspace and more importantly: Files are not decorated with the "plus" icon, nor are they considered "added" when I do the next commit.

Current workaround: Using "Track" instead of "Add" works just fine and seems to have the same effect as Add (please forgive my ignorance, but what's the difference between the two anyway?)

That's mainly due to missing .gitignore support, see bug 315306 and egit-dev list discussion mentioned therein.
