While there is some documentation available in the org.eclipse.rap.ui.settingstores EP, it would be even nicer to have a help topic on the RWT setting store concept and load by id. The topic is complicated enough to justify a help contribution.

A documentation has been added to RAP Developers Guide in RAP 2.0 (RAP Developer Guide > Scopes and Threads in RAP > Storing Data). Additional snippet how to set a custom SettingStore has been added too.
